Sabatino Abagnale - President of Presidio Slow Food section in Campania is the manufacturer of our famous tomato "A Miracle" from San Gennaro and a tomato expert himself. He is trying to find the best sort of tomato in Italy. Tomatoes – pelati  "Terra Amore & Fantasia" were born out of a need to have an excellent product in (Neapolitan) cuisine for the right price. It is made by traditional recipe and this is noticeable by the density and color, which is different from tomatoes that are grown and processed in industrial production.
 
SPECIAL VARIETY OF TOMATOES
Named after the Italian neorealistic film of Luigi Comencini "Bread, Love and Dreams / Pane, amore e fantasia" from 1953; after times when things were, at least in the kitchen more simple  and authentic.
Terra Amore & Fantasia - peeled tomatoes in their own juice in a can are old varieties from Apulia, a region that is rich with sun and good, fertile soil like Sicily and Campania region and is known for its excellent tomato varieties. The variety is called Pull, very rare, unique variety.
This type of tomato is very demanding and it has naturally low yield so it slowly disappeared in Italy as it was not profitable enough. Sabato rediscovered it and decided to maintain it for future generations.
These tomatoes are very rich in taste and develop sweetness and a touch of basil taste when cooked. They are very beautiful, strong red color, very juicy, preserved in a can in its own juice and of magnificent taste - quite different from grown in greenhouses.
They are produced in limited quantities and are harvested just for 15 days in August when they are most ripe, fleshy and juicy. Other producers harvest green and red tomatoes at the same time as red ones cover the bad taste of the green ones. Tomatoes are harvested by hand and also the processing is manual where they use the knowledge and techniques of their grandfathers.
 
ENJOYING
It is always smart to have this type of tomato in your pantry as it is very useful. As a base for pasta sauces, on pizza, as ingredient in a meat stew or whenever you wish Mediterranean flavors on your plate. Especially in winter time, when we do not have fresh tomatoes from the garden available, they are more than welcome.
 
PRODUCED WITH RESPECT
Mr. Sabato has chosen an extreme path with no compromises: artisan and traditional in complete harmony with the environment and the rhythms of the land. He has been processing preserved tomatoes for more than 10 years. First on an industrial scale, alongside with his father, and now for six years artisanal, as the leading producer of the “Slow Food Presidi”. He has chosen the more difficult path, a path that requires a strong will and the patience to wait for the land to grow its fruits, without relying on modern techniques of intensive cultivation and intrusive technology. They respect Earth, traditions and the products of the Earth. Their objective is to revalue agricultural economy of their country and to build a future of hope for generations to come.
They take care of the product completely by themselves from producing to selling it. It is very important that they use no chemicals; they use a method whit which only one product is planted in the same soil in one year.
